# 意味

1. 酒や発酵食品を作る際の基となるもの。こうじ、またはこうじかび（麹菌）を指す。
2. 酒がかもされて（発酵して）あわ立つこと。発酵の過程で気体が生成され泡立つ現象を示す。
3. 発酵の元となる物質や状態全般を表す。例として酵母やこうじ菌などがある。
4. 酒を絞った後に残る固形物、酒かすを指すこともある。
